Grain-Free Banana Pancake Recipe

At our house we love pancakes. Traditional recipes call for flour, sugar and oil which is not a healthy way to start your day. My solution (so you can have your pancakes and eat them too) is a grain-free, honey and banana sweetened pancake that doesn’t need syrup. Louise loves this recipe and I always make extra for her. They are also delicious the next day.


1 Cup almond flour (finely ground)
1/2 cup coconut flour
1/2 tsp baking soda
1/2 tsp salt

3  eggs
3 TB honey
1 can coconut milk
1 mashed ripe banana
1 TB vanilla


Mix the wet ingredients together in a bowl
Mix the Dry ingredients together in a bowl
Combine the wet and dry ingredients in a medium sized bowl until the batter is a pourable consistency.

1/4 tsp cinnamon, nutmeg, blueberries, blackberries.

    I made these this morning for my son’s 25th birthday breakfast! I used coconut oil to cook them and burnt the first batch pretty good because I had the pan too hot. I got the hang of it after that. They are delicious and already sweet. I actually didn’t put much honey in at all. The banana makes them sweet as does the almond flour. The house smells wonderful now. 🙂 Thank you for the recipe.
